Plant winter wheat in the fall and it will put down thin roots underground and a lawn-like carpet above ground. It grows two-feet, to five-feet tall the following spring. It can be harvested for straw and grain the that summer.
Winter wheat self-terminates as a cover crop if you plant it in the spring; it won't develop seed properly without winter freezing (vernalization.)
